"Wine bars" appear to be all the buzz in downtown Pensacola. And while all three establishments being mentioned under that umbrella — The Leisure Club, which will celebrate its grand opening next week at 126 Palafox Place; 5˝, the upscale bar at the new Vinyl Music Hall; and Chan's Wine World, which is under construction in the old ESP offices next to Hopjacks — are offering much more than wine, they can be viewed through something of the same lens. The Leisure Club will have a mod '60s feel, and along with wine will feature baristas serving Intellengensia coffee and tea and light fare from Le Cordon Bleu-trained Head Chef Kimathi Robinson, an expert in charcuterie (the cooking of meat products) and housemade cheeses. I keep hearing about gourmet grilled cheese sandwiches, which pretty much guarantees I'll be checking them out. The official opening is next week, but I hear that if you pop in later this week, you may be in for a surprise.5˝ is focused on high-end spirits and wine and is anchored by two expert barhands, Tim Dohms and Patrick Bolster. The bar is open seven days a week except during concert nights at Vinyl.Mari Josephs will be the general manager of Chan's Wine World. Josephs said she hopes to open the first weekend in October, construction permitting.Wine World will feature a wine bar with wines by the glass and wine flights, a retail wine shop, quality bistro fare and a gourmet cheese shop featuring cheeses directly imported from Europe and hard to find, freshly cut cheeses. Indoor and outdoor seating will be available.
